“Sorghum flour is my personal favorite gluten-free flour. I love its mild yet earthy flavor profile, like whole grain wheat, but of course without the gluten. It is among the grains highest in vitamins and minerals, containing calcium, magnesium, potassium, zinc, folate, and vitamin K among others. Because it is higher in fiber than most grains it slows digestion thus not spiking insulin levels as much as other grains or processed flours. The only sorghum flour Green Bakery uses is Organic Whole Grain Sorghum. Sorghum also has a little sweetness to it, which is why at the Green Bakery we use it in a lot of our desserts.
